FASTECH and Message
DWCAT’s FASTECH technology is strongly aligned with nature and the traditional barrel aging process for spirits. Barrel aging spirits did not happen overnight, it took generations of craftsmen and artisans’ time...lots of it, to create an exceptional spirit.
Traditional barrel aging is a time dependent process. After clear spirit distillate is poured into oak barrels, it slowly seeps into the tight wood grains. This interaction causes waves of flavor and aroma molecules to be gently released into the spirit. The wood barrel, the aging environment, and the aging time have critical impact on the final spirit quality.
DWCAT’s FASTECH process and the traditional barrel process both use wood, spirit distillate, and time. To accelerate the time dependent release of flavor and aroma molecules deep inside the tight wood grain structure, the FASTECH process utilizes the special properties of carbon dioxide (CO2).
CO2 is an odorless, tasteless, non-toxic, recyclable, non-polar molecule that achieves a supercritical fluid state at specific temperatures and pressures. When CO2 is in the supercritical fluid state, it can quickly diffuse into dense wood and gently extract flavor and aroma molecules without damaging their native structure...As they were in the natural state, is how they are when extracted into the spirit distillate. CO2 leaves behind no residues and is a natural green extraction process.
DWCAT’s FASTECH process dramatically reduces the amount of time necessary to reach and gently extract flavor and aroma molecules deep in the dense wood. However, just like the traditional barrel process, time is still necessary...after the FASTECH process is complete, the spirit continues to age with the activated wood in a glass bottle. All the waves of naturally extracted flavor and aroma molecules are now present in the spirit and undergo time dependent conversion to more complex entities/molecules. The spirit and FASTECH wood rests until the desired color, aroma, taste, and mouthfeel are obtained, usually in a fraction of time compared to traditional barrel aging.
